Goodstock Ambassador Feature: Nick Pencis, Pitmaster and Owner of Stanley's Famous Pit BBQ

Family-owned and operated since 1958, Stanley’s Famous Pit BBQ is the oldest operating mom-and-pop barbeque joint in Tyler, Texas, serving up true, pit-smoked barbeque for 63 years.

Nick and Jen Pencis took over the business in 2006 from founder J.D. Stanley and have kept the spirit of J.D.’s recipes and methods alive, while adding their own unique flair to the restaurant. Clearly, they hit the mark; Stanley’s Famous Pit BBQ was named one the Top 50 Best BBQ Joints in Texas by Texas Monthly in 2017 and 2021. With three giant pits and a menu that represents the best of the East Texas barbeque style, Pencis knows there is no substitute for good beef. That is why he switched to Goodstock U.S.D.A. “When we cooked our first Goodstock brisket, the difference was obvious,” Nick said. “The flavor was brighter and stronger, and the tenderness was like no brisket I’d ever smoked; it just felt different in your mouth. I was sold on it immediately.”

The results were on full display during the 2021 Road Trip Edition of Texas Monthly BBQ Fest, which made its first Pit Stop at Stanley's Famous Pit BBQ. Hundreds of people showed up hungry for East Texas 'que and a rockin' good time, and they were not disappointed. 

Looking to the future, Goodstock is excited to continue its partnership with one of the shining stars in the thriving Texas BBQ scene, and celebrate the continued success of Stanley's Famous Pit BBQ.
