Beef Tender Tips with Gravy & Mashed Potatoes

Serves: 8 - 10
Ingredients:
- 3Tbsp. Butter
- 2 lbs. Goodstock tender tips
- 2 Tbsp. All- purpose flour
- 1 Onion, minced
- 8 ounces of button mushrooms, cut into halves or quarters depending on size
- 1 1/2 tsp. Garlic powder
- 1 1/2 tsp. Sugar
- 1 tsp. Onion powder
- 1 tsp. Dried thyme
- 1 tsp. Mushroom powder
- 1 Tbsp. Worcestershire sauce
- 1 Large bay leaf
- 1/2 cup Pepperoncini peppers, thinly sliced
- 2 cups Low sodium beef stock
- 2 Tbsp. Cornstarch (mixed with a few tablespoons of water)
Instructions:
Searing the meat: season the flour with salt and pepper and mix together. dredge the beef tender tips with the seasoned flour (make sure to shake off any excess flour from the meat prior to searing). Heat butter in skillet over medium-high heat. Once melted add the beef tender tips in batches to create a brown crust on each edge of the tender tips. Remove each batch and set aside while the next batch cooks (you will not need to cook the beef tip all the way through during this step). Once all the beef tips have been seared, sauté the onions in the same skillet and make sure to scrape the bottom of the pan to get all of the brown flavorful bits incorporated into the onions.
Instant Pot Option:
Add seared beef tips, onions, seasonings, beef stock and remaining seasoning (except for the cornstarch mixture) to the Instant Pot. Press the "meat/stew" setting and then cook on Manual high pressure for 35 minutes. Once the stew is cooked through, release the vent to slowly to allow the pressure to escape (10-15 minutes). This will give the beef enough time to soak up all the flavors. Next, click the "Sauté" setting. Create the cornstarch mixture by adding water to the 2 Tbsp. of cornstarch. Once the liquid in the Instant Pot starts bubbling add the cornstarch mixture and stir to thicken (should take 1-2 minutes). If the gravy becomes too thick, add more water to thin it out. If the gravy becomes to thin, create more cornstarch mixture and add slowly until the gravy thickens to your liking. Taste the gravy and beef tip mixture and add additional salt and pepper to taste. Serve Beef Tips and Gravy over fluffy mashed potatoes and enjoy!
Slow Cooker Option:
Add seared beef tips, onions, seasonings, beef stock and remaining seasoning (except for the cornstarch mixture) to the slow cooker and cook on high for 3-4 hours or on low for 5-7 hours. 35 minutes before the cooking time is complete, scoop out 1/2 cup liquid from the slow cooker into a small bowl and add 2 Tbsp. of cornstarch and whisk until smooth. Add the cornstarch mixture back into the slow cooker and stir to combine and finish cooking for the last 30 minutes. If the gravy becomes too thick, add more water to thin it out. If the gravy becomes to thin, create more cornstarch mixture and add slowly until the gravy thickens to your liking. Taste the gravy and beef tip mixture and add additional salt and pepper to taste. Serve Beef Tips and Gravy over fluffy mashed potatoes and enjoy!
